101 Starters in 20 Minutes

(Newser) – Need to impress guests on short notice? The Times' Mark Bittman has some appetizers suggestions—101 of them, to be exact. A sampling:

  • Put crisp apple and pickled herring on rye flatbread
  • Cover bruschetta with well-cooked broccoli rabe tossed with minced garlic and oil. Tuscan beans optional
  • Spear cubes of just-ripe pears with bacon. Sprinkle with salt, sugar and cayenne. Serve with toothpicks

  • Bake manchego- or mozzarella-stuffed Medjool dates until the cheese melts
  • Pour melted butter over popcorn. Toss with fresh parmesan
  • Scoop seeds out of cucumber slices. FIll with yogurt or creme fraiche mixed with dill. Top with caviar or salmon roe
  • Mix one part chopped walnuts with four parts cream or goat cheese. Spice well
  • Slice fine roast beef; serve with horseradish on rye
  • Toss roast duck with hoisin sauce and roughly chopped scallions. Roll it up in tortillas
  • Put raw shrimp in a food processor with garlic, chili, ginger, and shallot. Make small patties and broil. Serve on buns with lime juice.
